Grilled Chicken and Veggie Sandwiches

This is a super supper sandwich!

Ingredients:
4 ounces cream cheese, softened
1 tablespoon milk
1 package dry ranch dressing mix
1 small garlic clove, minced or pressed
4 boneless chicken breasts (about 4 oz. each)
8 slices sourdough bread ( or bread of your choice but should be pretty firmed textured bread)
Vegetable oil or EVOO (Extra Virgin Olive Oil)
2 tablespoons all purpose flour
1/2 small cucumber, sliced
2 plum tomatoes, sliced
1/2 cup sliced red onion
1 carrot, cut into julienne strips
1 cup alfalfa sprouts
1 firm, ripe avocado, sliced

1. In a small bowl, combine cream cheese, milk, 2 teaspoons of the dressing mix, and garlic. Mix well and set aside.

2. Prepare the vegetables - cucumber,tomatoes, onioin, carrot, avocado and sprouts. Set aside.

3. Toast the sliced bread by your normal method - toaster oven, regular oven.

4. Place each chicken breast between 2 pieces of parchment or wax paper. Pound with a rolling pin until 3/4 inch thick. Spray skillet with cooking spray or heat 1 tablespoon oil over medium heat. Combine remaining dressing mix and flour; mix well. Roll chicken in the mixture, shaking off excess. Place chicken in pan and cook for 5-7 minutes per side until chicken is no longer pink. Remove from pan.

5. To assemble sandwiches, spread cream cheese mixture onto each bread slice. Evenly layer the cucumber, tomato, onion, chicken, carrot, sprouts, and avocado on one slice and then place the other slice on the top. Cut sandwiches diagonally.

Kids Fillings for Crackers and Sandwiches

Difficulty * with adult supervision

Ingredients to make:

Carrot and Cheese Filling
1 cup grated carrots
1 tablespoon salad dressing (salt, pepper, 3 tablespoons olive oil, pepper, 1 teaspoon prepared dijon mustard, 1 teaspoon dried oregano, 1 tablespoon wine vinegar or lemon oil - mixed)
1 cup grated cheese
1 peeled grated apple

Put the grated cheese, carrot and apple in a bowl. Add salad dress, salt and pepper and mix everything together.

Tuna Filling

1 small can tuna
2 tablespoons mayonnaise
1 finely chopped, celery rib
1 finely chopped scallion

Put the finely chopped scallion and celery in a bowl with the drained tuna, mayo, salt and pepper. Stir well.

Ham and Chicken Filling
3 tablespoons sour cream
1/3 cup diced ham
1 diced cooked skinned chicken breast
1 tablespoon chopped parsley

Beat the sour cream in a bowl until it is smooth, then stir in ham, chicken, parsley, salt and pepper.

Creamy Cheese Filling:

1/4 diced red pepper
4 oz cream cheese
2 tablespoons chopped cucumber

Beat the cream cheese in a bowl with a fork until smooth, then mix in the red pepper, cucumber, salt and pepper.

Egg Filling:
2 hard boiled eggs
1 tablespoons sprouts
1 tablespoons mayonnaise

Boil the eggs in a saucepan for 7-10 minutes. Cool under cold water and then peel. Mash in a bowl and add the sprouts, mayo, salt and pepper.

Avocado Filling:
1 ripe avocado
1 finely chopped tomato
2 tablespoons sour cream

Cut the avocado in half, then remove the pit and skin. Mash the flesh in a bowl, then stir in tomato and sour cream.

Serve on different types breads, rolls or crackers. Store in refrigerator.

You Can Cook: Toasted Cheese Sandwiches

Ingredients to make two sandwiches:
4 slices bread
2 slices American cheese
butter

1. Place a flat skillet or frying pan on the stove and spray with cooking spray.
2. Turn burner on medium.
3. Butter both sides of one piece of bread and place on pan.
4. Remove cheese from wrapper and place on bread.
5. Butter both sides of other piece of bread.
6. Let each side cook on the skillet until it has turned golden brown. Watch carefully. Don't let them burn.
7. Remove from heat and enjoy.

Tips:
For more cheesy sandwish, use two slices of cheese.
For added flavor, use Campbell's Tomato Soup. Follow directions on can, except mix with 1 cup milk. When hot, dunk your sandwiches in soup. Ah, nice meal!
