Country Potato Soup FEATURED FAVORITE

Difficulty: **

Ingredients:
4-5 large potatoes, peeled and diced
1/2 cup celery, diced
1/2 cup onion, diced
1-1/2 cups water
2 chicken boullion cubes (do not substitute)
1/2 tsp salt
2 cups milk, 2% or whole (1% or skim gives the soup a funny texture)
1 cup sour cream (8 oz)
2 Tablespoons flour

In a large saucepan, combine potatoes, celey onion, water, boullion cubes and salt. Cover and cook until potatoes are tender - about 20 minutes. Watch carefully. DO NOT OVERCOOK. They should still be tender, not mushy. Add 1 cup milk into the pan with the potatoes and heat. In medium bowl, mix sour cream, flour, and remaining 1 cup milk. Gradually stir this mixture into soup. Cook over low heat. STIR CONSTANTLY - don't let it burn to the pan. Remove from heat after it thickens.

Yield: 4-6 servings

Tip: After I've cooked over low heat for 30 minutes, I usually put the mixture in a crockpot and let it simmer on low for several hours. Keep checking and stirring.

Crockpot Bacon Ranch Potatoes

Ingredients:

3  Tablespoons butter
8  slices of bacon
2-3 lbs red potatoes
1.5 Tablespoons Ranch Salad Dressing Seasoning
1.5 cups of shredded cheddar cheese

Directions:
1.  Line the interior of your crockpot with foil.
2.  Fry 8 slices of bacon and set aside to cool.
3.  Put 3 Tablespoons butter in the crockpot.
4.  Quarter the red potatoes and fill the crockpot 2/3 full.
5.  Crumble the bacon on top of the potatoes.
6.  Add the Ranch Salad Dressing Seasoning.
7.  Put 1 1/2 cups of cheddar cheese on top.
8.  Lightly mix the contents.
9.  Put the lid on the crockpot and cook on high for 4 hours or low for 8 hours.

Tips:
1.  Use your favorite cheese - cheddars, colby jack, etc.  The more cheese you add the more cheesy the potatoes, but I wouldn't add more than 2 cups.  Cooking over a long period sometimes makes the cheese crispy
2. Don't skip the foil step - it helps the potatoes cook.  No need to be fussy about how the foil fits into the crockpot either.

  • Salt
  • Pepper

  • Bake at 325 for 60 minutes if using a convection oven.
  • Bake at 100% power for 10 minutes if using a microwave; flip upside down at halfway mark.
How to know if it's done:
  • When a baked potato is thoroghly cooked, you'll be able to pierce a fork or a knife directly to the center from any side without any resistance; this tenderness is a sign that it is cooked to perfection.
Enjoy! Top with butter, sour cream, bacon crumbles, or chives for a yummy side dish anyone can cook!
