Ingredients:
Sauce
2 cans (8 oz) tomato sauce
1/2 teaspoon chili powder
1/2 package Schilling Enchilada Sauce mix
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
3 Tablespoons chopped onions
1 1/2 cups of water
Filling
1 lb. ground turkey or hamburger
1/2 to 1 lb. grated Longhorn cheese
1/2 - 1 lb. grated Monterey Jack
1 can sliced olives
1 package tortillas
Instructions:
In a large bowl, mix all the sauce ingredients and stir. Set aside. Use cooking spracy to coat a 9 x 13 baking pan. Fry hamburger. Take each tortilla and fill with hamburger, cheese, olives. Roll and secure with a tookthpick and place in 9 x 13 pan. When pan is full, pour sauce over enchiladas and cover with grated cheese. Bake at 350 degrees for 30 minutes.
Variations:
Add any other vegetables of your choosing - green peppers is a good one.
I lay the enchilada flap side down, eliminating the need for a toothpick.
Substitute any of your favorite cheeses. This recipe tastes great with any combination.
Serve with sour cream and/or guacamole.
